Ingredients

  • 1.5 cups Gluten-free all-purpose flour blend
  • 0.5 teaspoons Xanthan gum
  • 1 teaspoon Baking powder
  • 2 teaspoons Ground cinnamon
  • 0.5 teaspoon Salt
  • 0.75 cup Unsalted butter, softened
  • 0.75 cup Granulated sugar
  • 0.25 cup Packed light brown sugar
  • 1 unit Large egg
  • 1 teaspoon Pure vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together the gluten-free all-purpose flour, xanthan gum, baking powder, ground cinnamon, and salt. Set aside.

Step 3

In a large bowl, cream the softened butter, granulated sugar, and brown sugar with an electric mixer on medium speed until light and fluffy, about 3 minutes.

Step 4

Beat in the egg and vanilla extract until fully incorporated.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Scrape down the sides of the bowl as necessary.

Step 6

Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 7

Gently flatten each ball of dough with the back of a spoon or your fingers.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers are set.

Step 9

Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.

Step 10

Store the cookies in an airtight container at room temperature for up to a week.
