Ingredients

  • 125 ml water
  • 60 grams unsalted butter
  • 1 pinch of salt
  • 80 grams gluten-free all-purpose flour
  • 2 large eggs
  • 30 grams pearl sugar

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

In a medium saucepan, combine the water, butter, and a pinch of salt. Heat over medium heat until the butter is melted and the mixture is boiling.

Step 3

Remove the saucepan from heat, and quickly add the gluten-free all-purpose flour. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.

Step 4

Transfer the dough to a bowl and allow it to cool slightly, for about 5 minutes.

Add the eggs, one at a time, beating well after each addition until the mixture is smooth and shiny. This can be done by hand or using an electric mixer.

Step 6

Spoon the pastry dough into a piping bag fitted with a large round tip, or simply use a spoon.

Step 7

Pipe or spoon small mounds about the size of a teaspoon onto the prepared baking sheet, leaving some space between each puff.

Step 8

Sprinkle the tops generously with pearl sugar, gently pressing them into the dough.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the chouquettes are puffed and golden brown.

Turn off the oven, crack open the door slightly, and allow the chouquettes to cool in the oven for 10 minutes. This helps them to maintain their shape.

Remove from the oven and allow to cool completely on a wire rack before serving.
