Ingredients

  • 100 grams Gluten-free all-purpose flour blend
  • 20 grams Cocoa powder
  • 30 grams Cornstarch
  • 1 teaspoon Xanthan gum
  • 0.5 teaspoon Salt
  • 60 grams Unsalted butter
  • 100 grams Granulated sugar
  • 60 grams Egg whites
  • 1 teaspoon Vanilla extract
  • 60 milliliters Milk
  • 100 grams Melted dark chocolate (for dipping, optional)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, sift together the gluten-free all-purpose flour blend, cocoa powder, cornstarch, xanthan gum, and salt. Set aside.

Step 3

In another large mixing bowl, cream the unsalted butter and granulated sugar together until light and fluffy, about 2-3 minutes.

Step 4

Add the egg whites to the butter and sugar mixture, beating until well combined and smooth.

Step 5

Stir in the vanilla extract and milk, mixing until fully incorporated.

Step 6

Gradually add the dry ingredient mixture to the wet mixture, stirring until a smooth batter forms. The batter should be slightly thick but still spreadable.

Step 7

Transfer the batter into a piping bag fitted with a round nozzle tip. Pipe long strips of batter (about 7-8 cm or 3 inches) onto the prepared baking sheet, leaving some space between each strip.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the wafer rolls are dry and crisp.

Step 9

Immediately after baking, while the wafer strips are still warm, carefully roll them around a thin cylindrical object (like a thin dowel or the handle of a wooden spoon) to form the wafer rolls. Work quickly to ensure they do not crack.

Step 10

Allow the wafer rolls to cool on a wire rack. Optionally, dip each end of the rolls into melted dark chocolate and let them set completely before serving.
