Ingredients

  • 1.5 cups Almond flour
  • 0.25 cup Coconut oil
  • 0.5 cup Maple syrup
  • 1 teaspoon Vanilla extract
  • 0.5 cup Unsweetened cocoa powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 2 large Eggs
  • 1 cup Chopped mixed nuts (almonds, walnuts, pecans)
  • 0.75 cup Dark chocolate chips (gluten-free)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, allowing the paper to hang over the edges for easy removal after baking.

Step 2

In a medium saucepan over low heat, melt the coconut oil. Once melted, remove from heat and stir in the maple syrup and vanilla extract until well combined.

Step 3

In a large mixing bowl, whisk together almond flour, cocoa powder, baking soda, and salt.

Step 4

In a separate bowl, lightly beat the eggs. Then combine the beaten eggs with the coconut oil mixture, stirring until everything is well combined.

Step 5

Pour the wet ingredients into the dry ingredients, mixing until just combined. Be careful not to overmix.

Step 6

Fold in the chopped mixed nuts and dark chocolate chips until evenly distributed throughout the batter.

Step 7

Pour the prepared batter into the lined baking dish, smoothing the top with a spatula.

Step 8

Bake in the preheated oven for about 20 to 25 minutes, or until the edges are set and a toothpick inserted in the center comes out clean or with just a few moist crumbs.

Step 9

Allow the bars to cool completely in the pan on a wire rack. Once cool, use the parchment paper to lift the bars out of the pan and onto a cutting board.

Step 10

Cut into 16 equal squares and serve. Store any leftovers in an airtight container at room temperature for up to 4 days.
