Ingredients

  • 1 cup gluten-free all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 2 tablespoons granulated sugar
  • 1 cup milk (dairy or non-dairy)
  • 1 unit large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, melted
  • 0.5 cup gluten-free chocolate chips
  • 2 tablespoons cooking oil or butter for greasing the pan

Directions

Step 1

In a medium-sized bowl, whisk together the gluten-free all-purpose flour, baking powder, baking soda, salt, and granulated sugar until well combined.

Step 2

In another bowl, mix the milk, large egg, and vanilla extract. Beat lightly until the egg is fully incorporated.

Step 3

Gradually add the wet ingredients into the dry ingredients, stirring gently. Do not overmix; a few lumps are okay.

Step 4

Stir in the melted butter until the batter is smooth, then gently fold in the gluten-free chocolate chips.

Step 5

Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking oil or butter.

Step 6

Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for about 2-3 minutes, or until bubbles appear on the surface and the edges look set.

Step 7

Flip the pancakes and cook on the other side for another 2-3 minutes, or until golden brown.

Step 8

Remove the pancakes from the pan and keep them warm while you repeat the process with the remaining batter.

Step 9

Serve the pancakes warm, topped with your favorite toppings such as syrup, additional chocolate chips, or fresh fruit.
