Ingredients

  • 4 pieces Gluten-free flour tortillas
  • 2 tablespoons Olive oil
  • 1 medium Red onion, diced
  • 1 large Red bell pepper, sliced
  • 1 medium Zucchini, diced
  • 1 cup Corn kernels, frozen or fresh
  • 1 15-ounce can Black beans, canned, drained, and rinsed
  • 2 tablespoons Chipotle peppers in adobo sauce, chopped
  • 1 teaspoon Ground cumin
  • 1 medium Lime, juiced
  • 1 teaspoon Salt
  • 2 tablespoons Fresh cilantro, chopped
  • 1 medium Avocado, sliced
  • 1 cup Salsa

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 2

Add the diced red onion and sauté for 2-3 minutes until it begins to soften.

Step 3

Stir in the red bell pepper, zucchini, and corn. Cook for another 5-7 minutes until the vegetables are tender.

Add the chopped chipotle peppers, ground cumin, and salt. Stir well to coat the vegetables with the spices.
