Ingredients

  • 2 pieces Chicken breast
  • 1 teaspoon Chipotle chili powder

  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Lime juice
  • 2 cups Cooked brown rice
  • 1 can Black beans
  • 1 cup Corn kernels
  • 1 cup Cherry tomatoes
  • 0.5 cup Red onion
  • 1 piece Avocado
  • 0.25 cup Cilantro
  • 0.5 cup Sour cream (optional)
  • 0.5 cup Shredded cheese (optional)

Directions

Step 1

Preheat your grill or stovetop grill pan to medium-high heat.

Step 2

In a bowl, mix chipotle chili powder, garlic powder, onion powder, smoked paprika, cumin, salt, and black pepper.

Rub the chicken breasts with olive oil and then coat them evenly with the spice mixture.
