Ingredients

  • 240 g Gluten-free all-purpose flour
  • 1 tsp Xanthan gum
  • 1 tbsp Instant yeast
  • 1 tsp Baking powder
  • 30 g Sugar
  • 120 ml Warm water
  • 2 tbsp Vegetable oil
  • 300 g Ground pork
  • 3 tbsp Soy sauce (gluten-free)
  • 1 tbsp Sesame oil
  • 1 tsp Sugar
  • 1 tsp Grated ginger
  • 2 cloves Minced garlic
  • 2 pieces Chopped green onions
  • 1 tbsp Cornstarch
  • 2 tbsp Cold water

Directions

Step 1

In a mixing bowl, combine gluten-free flour, xanthan gum, instant yeast, baking powder, and sugar.

Step 2

Gradually add warm water and vegetable oil to the dry ingredients, mixing until a dough forms.

Step 3

Knead the dough gently for about 5 minutes until it's smooth. Cover with a damp cloth and let it rise in a warm spot for 30 minutes or until doubled in size.

Step 4

For the filling, combine ground pork, gluten-free soy sauce, sesame oil, sugar, grated ginger, minced garlic, and chopped green onions in a bowl.

Step 5

Mix cornstarch and cold water until smooth, then add it to the pork mixture. Stir until well combined.

Step 6

Divide the dough into 12 equal pieces. Roll each piece into a ball and flatten into a circle about 4 inches in diameter.

Step 7

Place a tablespoon of pork filling in the center of each dough circle.

Step 8

Gather the edges of the dough circle over the filling and pinch together to seal. Repeat with remaining dough and filling.

Step 9

Place each bun on a piece of parchment paper in a steamer basket. Leave sufficient space between buns to allow them to expand.

Step 10

Cover the steamer and let the buns rest for 15 minutes.

Step 11

Fill a wok or large pot with a few inches of water and bring to a boil.

Step 12

Place the steamer basket over boiling water, cover, and steam the buns for 15 minutes.

Step 13

Turn off the heat and let the buns sit for a few extra minutes before removing the lid to prevent them from collapsing.

Step 14

Serve the buns hot, enjoying their tender gluten-free texture and savory pork filling.
