Ingredients

  • 2 cups Gluten-free all-purpose flour
  • 1 teaspoon Xanthan gum
  • 0.75 cup Boiling water
  • 0.5 pound Ground pork
  • 1 cup Cabbage
  • 2 stalks Green onions
  • 1 tablespoon Ginger
  • 2 tablespoons Gluten-free soy sauce
  • 1 teaspoon Sesame oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Pepper
  • 2 tablespoons Water
  • 2 tablespoons Cooking oil

Directions

Step 1

In a mixing bowl, combine the gluten-free all-purpose flour and xanthan gum.

Step 2

Gradually add the boiling water to the flour mixture, stirring continuously until a dough forms.

Step 3

Knead the dough on a clean surface until smooth, then cover with a damp cloth and let it rest for 30 minutes.

Step 4

Finely chop the cabbage and green onions, and grate the ginger.

Step 5

In a separate bowl, mix together the ground pork, cabbage, green onions, ginger, gluten-free soy sauce, sesame oil, salt, and pepper until well combined.

Step 6

Divide the rested dough into 20 even pieces and roll each piece into a ball.

Step 7

Using a rolling pin, roll each ball into a thin circle about 3 inches in diameter.

Step 8

Place a small spoonful of the pork mixture in the center of each wrapper.

Step 9

Fold the wrapper over the filling to form a half-moon shape, pressing the edges tightly to seal. Optionally, pleat the edges for a traditional look.

Step 10

Heat the cooking oil in a non-stick pan over medium heat.

Step 11

Place the dumplings in the pan, seam side up, and cook until the bottoms are golden brown, about 3 minutes.

Step 12

Carefully add the water to the pan, cover with a lid, and steam the dumplings until the water has evaporated, about 8-10 minutes.

Step 13

Remove the lid and continue cooking for another 2 minutes until the bottoms are crisp again.

Step 14

Serve the dumplings hot with extra gluten-free soy sauce for dipping.
