Ingredients

  • 200 grams Gluten-free somen noodles
  • 2 liters Water
  • 2 tablespoons Rice vinegar
  • 4 tablespoons Gluten-free soy sauce
  • 2 tablespoons Mirin
  • 1 tablespoon Sugar
  • 1 cup Dashi stock
  • 1 teaspoon Ginger, grated
  • 2 tablespoons Green onions, finely chopped
  • 1 sheet Nori (dried seaweed), cut into thin strips
  • 1 tablespoon Sesame seeds

Directions

Step 1

Bring 2 liters of water to a boil in a large pot.

Step 2

Add the gluten-free somen noodles to the boiling water and cook for 4-6 minutes or according to package instructions until al dente.

Step 3

Drain the noodles in a colander and rinse them thoroughly under cold running water to remove excess starch and stop the cooking process.

Step 4

Once cooled, set the noodles aside in a bowl of ice water to keep them chilled until ready to serve.

Step 5

In a small saucepan, combine rice vinegar, gluten-free soy sauce, mirin, sugar, and dashi stock.

Step 6

Heat the mixture over medium heat, stirring until the sugar is completely dissolved and the sauce comes to a gentle simmer.

Step 7

Remove from heat and add grated ginger to the mixture. Let it cool to room temperature, then refrigerate until chilled.

Step 8

To serve, drain the somen noodles from the ice water and divide them into portion bowls or plates.

Step 9

Garnish the noodles with finely chopped green onions, thin strips of nori, and sesame seeds.

Step 10

Pour the chilled dipping sauce into individual serving bowls.

Step 11

Serve the chilled somen noodles with the dipping sauce on the side. Enjoy by dipping the noodles into the sauce before eating.
