Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 0.5 teaspoons salt
  • 0.5 teaspoons ground black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 8 ounces cremini or white mushrooms, sliced
  • 1 cup gluten-free chicken broth or stock
  • 2 tablespoons gluten-free all-purpose flour
  • 0.5 cup heavy cream
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Season the chicken breasts on both sides with salt and pepper.

In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for about 6-7 minutes on each side, or until browned and fully cooked. Remove and set aside on a plate, covering with foil to keep warm.
