  • 2 cups chicken breast, cooked and shredded
  • 10 ounces gluten-free tortellini
  • 3 cups baby spinach
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium heat.

Add the chopped onion, sliced carrots, and celery. Cook for 5-7 minutes, stirring occasionally, until the vegetables are soft.
