Ingredients

  • 4 pieces Chicken breast fillets
  • 1 cup Gluten-free all-purpose flour
  • 2 large Eggs
  • 2 cups Gluten-free breadcrumbs
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 1 cup Vegetable oil
  • 4 pieces Gluten-free burger buns
  • 4 pieces Lettuce leaves
  • 2 medium Tomatoes
  • 0.5 cup Mayonnaise
  • 4 slices Pickles

Directions

Step 1

Place each chicken breast between two pieces of plastic wrap and pound to an even thickness of about 1/2 inch using a meat mallet.

Step 2

Set up a breading station with three shallow bowls. Place gluten-free flour in the first bowl. In the second bowl, beat the eggs with a tablespoon of water. In the third bowl, combine the gluten-free breadcrumbs, salt, black pepper, paprika, and garlic powder.

Step 3

Dredge each chicken breast in the flour, shaking off the excess, then dip into the egg mixture, and finally coat well in the breadcrumb mixture.

Step 4

In a large skillet, heat the vegetable oil over medium heat. Once the oil is hot, fry the schnitzels in batches for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Step 5

Slice the gluten-free burger buns and lightly toast them if desired.

Step 6

To assemble each burger, spread a thin layer of mayonnaise on each side of the bun. Place a piece of lettuce on the bottom half, followed by a schnitzel, a slice of tomato, a slice of pickle, and then top with the other half of the bun.

Step 7

Serve immediately with your choice of side.
