  • 4 pieces Gluten-free tortillas
  • 2 pieces Chicken breast
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Basil leaves
  • 0.5 cup Parmesan cheese, grated
  • 0.25 cup Pine nuts
  • 2 pieces Garlic cloves
  • 1 tablespoon Lemon juice
  • 1 cup Cherry tomatoes
  • 2 cups Mixed salad greens

Directions

Step 1

Begin by prepping the chicken breasts. Season both sides with salt and black pepper.

Heat 1 tablespoon of olive oil in a skillet over medium heat.

Add the chicken breasts to the skillet and cook for 7-8 minutes per side, until cooked through and juices run clear. Remove from the skillet and let rest for a few minutes before slicing into thin strips.
