Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 cups buttermilk
  • 2 cups gluten-free all-purpose flour
  • 1 cup gluten-free cornmeal
  • 1 tablespoon baking powder
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 large eggs
  • 4 cups vegetable oil

Directions

Step 1

Pound the chicken breasts to an even thickness using a meat mallet and place them in a large bowl.

Step 2

Pour the buttermilk over the chicken, ensuring each piece is well coated. Cover and refrigerate for at least 1 hour or up to overnight for tender chicken.

Step 3

In a large dish, combine the gluten-free all-purpose flour, cornmeal, baking powder, salt, ground black pepper, paprika, garlic powder, and onion powder.

Step 4

In a separate bowl, whisk the eggs until smooth.

Step 5

Remove the chicken from the buttermilk marinade and let excess marinade drip off. Dip each piece into the flour mixture, then into the egg mixture, and again in the flour mixture to ensure a thick coating.

Step 6

Heat the vegetable oil in a large cast-iron skillet or heavy frying pan over medium-high heat until it reaches 350°F (175°C).

Step 7

Fry the chicken in batches, being careful not to overcrowd the pan. Cook each piece for about 5-6 minutes on each side, or until the coating is golden brown and the chicken is cooked through (internal temperature should read 165°F or 74°C).

Step 8

Remove the fried chicken to a paper towel-lined plate to drain excess oil.

Step 9

Serve hot with your favorite gluten-free gravy or sides.
