Ingredients

  • 500 grams Chicken thighs, boneless and skinless
  • 200 ml Gluten-free yogurt
  • 2 tablespoons Olive oil
  • 4 Garlic cloves, minced
  • 2 tablespoons Lemon juice
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground paprika
  • 0.25 teaspoon Ground cinnamon
  • 0.5 teaspoon Chili powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 Red onion, thinly sliced
  • 1 Tomato, sliced
  • 0.5 Cucumber, sliced
  • 4 Gluten-free flatbreads or wraps
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

In a large bowl, mix together the gluten-free yogurt, olive oil, minced garlic, lemon juice, ground cumin, ground coriander, ground paprika, ground cinnamon, chili powder, salt, and black pepper to form the marinade.

Add the chicken thighs to the marinade. Stir well to ensure all the chicken pieces are coated. Cover and refrigerate for at least 1 hour, preferably overnight, to allow the flavors to meld.

Preheat your oven to 200°C (390°F). Line a baking sheet with parchment paper.
