Ingredients

  • 1 pound Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 1 large Yellow onion
  • 1 medium Green bell pepper
  • 1 medium Red bell pepper
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 6 slices Provolone cheese
  • 2 rolls Gluten-free hoagie rolls

Directions

Step 1

Slice the chicken breasts into thin strips about 1/4-inch thick.

Step 2

Heat olive oil in a large skillet over medium heat.

Step 3

Thinly slice the yellow onion and bell peppers and add to the skillet. Sauté for 5 minutes until onions are softened and peppers are tender.

Step 4

Push the cooked vegetables to one side of the skillet, and place the sliced chicken on the other side.

Step 5

Sprinkle the chicken with garlic powder, salt, and black pepper. Cook for 8-10 minutes until the chicken is fully cooked through and no longer pink, stirring occasionally.

Step 6

Mix the cooked chicken with the sautéed peppers and onions until well combined.

Step 7

Layer provolone cheese slices evenly over the chicken and vegetable mixture, and allow to melt, about 2 minutes.

Step 8

Split the gluten-free hoagie rolls and place on a baking sheet. Optionally, lightly toast them under a broiler on low heat.

Step 9

Fill the hoagie rolls generously with the chicken cheesesteak mixture.

Step 10

Serve immediately while hot and enjoy!
