Ingredients

  • 300 grams Pitted dates
  • 120 grams Gluten-free rolled oats
  • 100 grams Almond flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 60 ml Coconut oil, melted

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

Place the pitted dates in a bowl and cover with hot water. Let them soak for 10 minutes to soften.

Step 3

Drain the dates and add them to a blender or food processor. Blend until they form a smooth paste, scraping down the sides as needed.

Step 4

In a large bowl, mix the gluten-free rolled oats, almond flour, baking powder, baking soda, ground cinnamon, and salt.

Step 5

In a separate bowl, whisk together the egg, vanilla extract, and melted coconut oil until well combined.

Step 6

Add the date paste and the wet ingredients to the dry ingredients. Stir until all ingredients are fully incorporated.

Scoop tablespoon-sized amounts of cookie dough and roll them into balls. Place them onto the prepared baking sheet, leaving a small space between each ball.
