Ingredients

  • 12 ounces gluten-free penne pasta
  • 1 tablespoon olive oil
  • 1 piece medium onion, diced
  • 1 piece red bell pepper, diced
  • 2 cloves garlic cloves, minced
  • 2 cups cooked ham, cubed
  • 1 cup frozen peas
  • 10.5 ounces gluten-free cream of mushroom soup
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1 cup Parmesan cheese, grated
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper, ground

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cook the gluten-free penne pasta according to the package instructions until al dente. Drain and set aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the diced onion and red bell pepper, and sauté for about 5 minutes, until softened.

Add the minced garlic to the skillet and cook for 1 more minute until fragrant.

Add the cubed ham and frozen peas to the skillet, stir to combine, and cook for another 3 minutes.

Step 6

In a large mixing bowl, combine the gluten-free cream of mushroom soup and milk. Whisk together until smooth.

Add the cooked pasta, sautéed vegetables and ham, 1.5 cups of shredded cheddar cheese, and 0.5 cup of Parmesan cheese to the mixing bowl. Season with salt and black pepper. Stir everything together until well combined.

Transfer the mixture into a 9x13 inch baking dish, spreading it evenly.

Sprinkle the remaining 0.5 cup of cheddar cheese and 0.5 cup of Parmesan cheese over the top of the casserole.
