Ingredients

  • 4 pieces Gluten-Free Tortillas
  • 2 pieces Chicken Breast
  • 2 tablespoons Olive Oil
  • 1 medium Red Bell Pepper
  • 1 medium Yellow Bell Pepper
  • 1 small Red Onion
  • 1 cup Spinach Leaves
  • 1 cup Cheddar Cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 0.5 teaspoon Paprika

Directions

Step 1

Slice the chicken breasts into thin strips.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken strips and season with salt, black pepper, and paprika. Cook the chicken until golden brown and cooked through, about 6-7 minutes. Remove from the skillet and set aside.

Step 3

In the same skillet, add the remaining tablespoon of olive oil. Slice the red and yellow bell peppers, and the red onion into thin strips. Add them to the skillet and sauté for 5 minutes until they are tender but still slightly crisp.
