Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 4 cups Fresh broccoli florets
  • 3 tablespoons Butter
  • 1 medium Onion, finely chopped
  • 2 pieces Garlic cloves, minced
  • 3 tablespoons Gluten-free all-purpose flour
  • 2 cups Chicken broth
  • 1 cup Milk
  • 2 cups Sharp cheddar cheese, shredded
  • 0.75 cup Gluten-free bread crumbs
  • 0.25 cup Parmesan cheese, grated
  • 2 tablespoons Parsley, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Season the chicken breasts with 1/2 teaspoon of salt and black pepper on both sides.

In a large skillet over medium heat, add 1 tablespoon of olive oil. Add the chicken breasts and cook for about 5-7 minutes on each side, or until fully cooked. Remove from the skillet and let it cool slightly before cutting into bite-sized pieces.

In the same skillet, add the remaining 1 tablespoon of olive oil and add the broccoli florets. Sauté for about 4-5 minutes until bright green and slightly tender. Remove and set aside.
