Ingredients

  • 1 large head Cauliflower
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1.5 cups Heavy cream
  • 4 ounces Cream cheese, softened
  • 2 cups Cheddar cheese, shredded
  • 1 cup Mozzarella cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 2 tablespoons Chopped fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the cauliflower into florets and wash them well. Pat dry with a clean kitchen towel.

Step 3

Spread the cauliflower florets evenly on a large baking sheet, drizzle with olive oil, and season with salt, black pepper, garlic powder, and onion powder. Toss to coat the florets evenly.

Step 4

Roast the cauliflower in the preheated oven for about 20 minutes or until tender and slightly golden.

Step 5

Meanwhile, in a large saucepan over medium heat, combine the heavy cream and cream cheese. Stir until the cream cheese has fully melted and the mixture is smooth.

Step 6

Add 1.5 cups of shredded cheddar cheese and 0.5 cup of mozzarella cheese into the cream mixture, stirring constantly until melted.

Step 7

Once the cauliflower is roasted, transfer it into a greased 9x13-inch baking dish.

Step 8

Pour the cheese sauce over the cauliflower and gently stir to coat all pieces.

Step 9

Mix the remaining cheddar, mozzarella, and the grated Parmesan cheese in a small bowl.

Step 10

Sprinkle the cheese mixture evenly over the top of the cauliflower.

Step 11

Bake uncovered in the oven for 20-25 minutes or until the top is golden and bubbly.

Step 12

Remove from the oven and let it cool slightly. Garnish with chopped fresh parsley before serving.
