Ingredients

  • 2 cups Gluten-free all-purpose flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Garlic powder
  • 0.5 cup Unsalted butter, chilled and diced
  • 1 cup Shredded sharp cheddar cheese
  • 0.75 cup Buttermilk
  • 1 large Egg
  • 2 tablespoons Chopped fresh chives (optional)

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Step 2

In a large bowl, whisk together the gluten-free all-purpose flour, baking powder, salt, and garlic powder.

Step 3

Add the chilled, diced butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

Step 4

Stir in the shredded sharp cheddar cheese until evenly distributed throughout the flour and butter mixture.

Step 5

In a separate small bowl, beat together the buttermilk and egg until well combined.

Step 6

Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until the dough comes together. Be careful not to overmix.

Step 7

If using, fold in the chopped fresh chives gently until just combined.

Step 8

Using a spoon or an ice cream scoop, drop the dough onto the prepared baking sheet, leaving about 2 inches between each biscuit.

Step 9

Bake in the preheated oven for 15 to 18 minutes, or until the biscuits are golden brown on top and cooked through.

Step 10

Remove the biscuits from the oven and allow them to cool slightly on the baking sheet before transferring them to a wire rack.

Step 11

Serve warm and enjoy your gluten-free cheesy biscuits.
