Ingredients

  • 12 oz gluten-free penne pasta
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 28 oz crushed tomatoes
  • 2 tsp dried Italian herbs
  • 1 tsp salt
  • 0.5 tsp ground black pepper
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup fresh basil, chopped
  • 0.25 tsp red pepper flakes (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil. Add the gluten-free penne pasta and cook according to the package instructions until al dente. Drain and set aside.

Step 3

In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant.

Step 4

Add the crushed tomatoes, dried Italian herbs, salt, and black pepper to the skillet. Stir well and let the sauce simmer for about 10 minutes to thicken.

Step 5

In a large mixing bowl, combine the cooked pasta, tomato sauce, ricotta cheese, 1 cup of mozzarella cheese, and half of the Parmesan cheese. Mix thoroughly until the pasta is evenly coated.

Step 6

Transfer the pasta mixture into a greased 9x13 inch baking dish. Spread it evenly.

Step 7

Sprinkle the remaining mozzarella cheese and Parmesan cheese on top. Add the red pepper flakes if using.

Step 8

Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.

Step 9

Once baked, remove from the oven and let it cool for a few minutes. Garnish with the freshly chopped basil before serving.

Step 10

Serve the Gluten-Free Cheesy Baked Penne hot and enjoy your meal!
