  • 8 pieces Gluten-free corn tortillas
  • 2 cups Shredded cheddar cheese

  • 0.5 teaspoon Salt
  • 0.5 teaspoon Ground black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

In a medium-sized bowl, combine the shredded cheddar cheese and Monterey Jack cheese. Mix well and set aside.

In a skillet over medium heat, warm the olive oil. Add the gluten-free tortillas one at a time for about 20 seconds per side, until they are pliable but not crispy. This helps to prevent cracking when rolling.
