Ingredients

  • 300 grams Gluten-free all-purpose flour
  • 50 grams Tapioca flour
  • 7 grams Active dry yeast
  • 240 ml Warm water
  • 2 tablespoons Olive oil
  • 1 teaspoon Sugar
  • 1 teaspoon Salt
  • 2 large Eggs
  • 100 grams Gruyère cheese, grated
  • 1 teaspoon Xanthan gum

Directions

Step 1

In a small bowl, combine the warm water, sugar, and active dry yeast. Stir and let it sit for about 5-10 minutes until it becomes frothy.

Step 2

In a separate large mixing bowl, add the gluten-free all-purpose flour, tapioca flour, salt, and xanthan gum. Mix until well combined.

Step 3

Create a well in the center of the flour mixture. Add the eggs and olive oil, then pour in the yeast mixture.

Step 4

Using a hand mixer with dough hooks or a stand mixer, mix the ingredients until a smooth dough forms. The dough should be slightly sticky.

Step 5

Fold in the grated Gruyère cheese, ensuring it's evenly distributed throughout the dough.

Step 6

Cover the bowl with a clean cloth and let the dough rise in a warm place for about 30 minutes. It should nearly double in size.

Step 7

Preheat your oven to 220°C (428°F) and line a baking sheet with parchment paper.

Step 8

Lightly flour a surface with gluten-free flour. Transfer the dough to this surface and shape it into two long baguettes.

Step 9

Place the baguettes on the prepared baking sheet. Use a sharp knife to make a few diagonal slashes across the top of each baguette.

Step 10

Bake in the preheated oven for 25-30 minutes or until the baguettes are golden brown and make a hollow sound when tapped on the bottom.

Step 11

Remove from the oven and let them cool on a wire rack before slicing.

Step 12

Serve warm or at room temperature. Enjoy your delicious gluten-free cheese baguette!
