Ingredients

  • 1 large gluten-free baguette
  • 250 grams cherry tomatoes
  • 200 grams mozzarella cheese
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 10 leaves fresh basil leaves
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice the gluten-free baguette into 12 slices, approximately 1/2 inch thick each.

Step 3

Arrange the slices on a baking sheet and brush each side lightly with olive oil, using a total of 1 tablespoon for the entire batch.

Step 4

Place the slices in the preheated oven and lightly toast for about 5 minutes, or until they are slightly crispy.

Step 5

While the baguette slices are toasting, cut the cherry tomatoes in half and place them in a mixing bowl.

Step 6

Add 1 tablespoon of olive oil, balsamic vinegar, salt, black pepper, and dried oregano to the tomatoes. Mix well to combine.

Step 7

Slice the mozzarella cheese into thin pieces that are roughly the size of the baguette slices. Aim for 12 slices to match each bread piece.

Step 8

Once the baguette slices are toasted, remove them from the oven.

Step 9

Top each baguette slice with a piece of mozzarella cheese and a generous spoonful of the tomato mixture.

Step 10

Return the topped baguette slices to the oven and bake for an additional 5-6 minutes, or until the cheese is fully melted.

Step 11

Once baked, remove from the oven and top each slice with a fresh basil leaf.

Step 12

Serve immediately while warm as an appetizer or snack.
