Ingredients

  • 250 grams Gluten-free flour blend
  • 1 teaspoon Xanthan gum
  • 0.5 teaspoon Salt
  • 225 grams Unsalted butter, chilled and cubed
  • 120 milliliters Whole milk
  • 2 tablespoons Granulated sugar
  • 2 teaspoons Instant yeast
  • 1 large Egg, beaten
  • 6 slices Ham slices
  • 6 slices Cheddar cheese, sliced
  • 1 portion Egg wash (1 egg beaten with 1 tablespoon of milk)

Directions

Step 1

Start by mixing the gluten-free flour blend, xanthan gum, and salt in a large bowl.

Step 2

In a separate bowl, warm the milk slightly and dissolve the sugar and yeast in it. Let it rest for 5 minutes until foamy.

Step 3

Make a well in the center of the flour mixture and add the yeast mixture and beaten egg. Stir until you form a dough.

Step 4

Turn the dough onto a lightly floured surface and knead gently until smooth. Wrap in plastic and refrigerate for 30 minutes.

Roll out the dough into a large rectangle about 1 cm thick. Place the chilled, cubed butter evenly over two-thirds of the dough.

Fold the unbuttered third of the dough over the middle, then fold the remaining third on top, like a letter fold. Turn the dough 90 degrees and roll out again into a rectangle.

Repeat the folding three more times, wrapping and chilling the dough for 15 minutes between each rolling and folding.

After the final roll, chill the dough for 30 minutes. Preheat your oven to 200°C (390°F).

Once chilled, roll the dough to a large rectangle and cut it into six triangles.

Arrange a slice of ham and a slice of cheddar cheese on each triangle, then roll from the base to the tip to form the croissants.

Place on a lined baking sheet and let rise in a warm place for 30 minutes.

Brush the croissants with the egg wash carefully.

Bake in the preheated oven for 15-20 minutes until golden brown and fully puffed.
