Ingredients

  • 120 grams Rice flour
  • 30 grams Tapioca starch
  • 30 grams Potato starch
  • 480 milliliters Water
  • 1 tablespoon Vegetable oil
  • 1 teaspoon Salt
  • 3 tablespoons Gluten-free soy sauce
  • 2 teaspoons Brown sugar
  • 2 tablespoons Water
  • 1 teaspoon Sesame oil
  • 1 tablespoon Sesame seeds
  • 2 tablespoons Scallions, chopped

Directions

Step 1

In a large mixing bowl, combine the rice flour, tapioca starch, and potato starch. Mix well.

Step 2

Slowly add 480 ml of water to the flour mixture while stirring continuously to form a smooth batter. Ensure there are no lumps.

Step 3

Stir in 1 tablespoon of vegetable oil and 1 teaspoon of salt into the batter and let it rest for about 10 minutes.

Step 4

Prepare the steamer by bringing water to a boil. Lightly grease a non-stick baking sheet or shallow tray that fits inside the steamer.

Step 5

Pour a thin layer of the batter onto the greased tray just enough to cover the surface, then place the tray into the steamer.

Step 6

Steam for 3-4 minutes or until the rice noodle layer becomes translucent.

Step 7

Carefully remove the tray and let it cool slightly. Use a spatula to roll up the sheet into a loose roll. Transfer the roll to a plate and cover to keep warm.

Step 8

Repeat the steaming process with the remaining batter.

Step 9

In a small saucepan, combine the gluten-free soy sauce, brown sugar, and 2 tablespoons of water. Heat over medium-low heat until the sugar dissolves, then stir in the sesame oil. Remove from heat.

Step 10

Pour the sweet soy sauce mixture over the rolled rice noodles.

Step 11

Garnish with sesame seeds and chopped scallions before serving.
