Ingredients

  • 300 grams Gluten-free all-purpose flour
  • 50 grams Tapioca starch
  • 50 grams Sugar
  • 10 grams Dry yeast
  • 5 grams Baking powder
  • 1 teaspoon Xanthan gum
  • 200 milliliters Warm water
  • 30 milliliters Vegetable oil
  • 300 grams Char Siu pork
  • 60 milliliters Gluten-free soy sauce
  • 30 grams Hoisin sauce
  • 30 grams Oyster sauce
  • 2 cloves Garlic, minced
  • 1 teaspoon Sesame oil
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water (for cornstarch slurry)

Directions

Step 1

In a mixing bowl, combine the gluten-free all-purpose flour, tapioca starch, sugar, dry yeast, baking powder, and xanthan gum.

Step 2

Gradually add the warm water and vegetable oil to the dry ingredients, mixing until a smooth dough forms. Cover with a damp cloth and let rise for 1 hour, or until doubled in size.

Step 3

While the dough is rising, prepare the char siu filling. Dice the Char Siu pork into small pieces.

Step 4

In a pan over medium heat, combine the gluten-free soy sauce, hoisin sauce, oyster sauce, and minced garlic. Stir together and heat for 2 minutes.

Step 5

Add the diced char siu pork and sesame oil to the pan, cooking until everything is well-mixed and heated through, about 4-5 minutes.

Step 6

Make a cornstarch slurry by mixing the cornstarch with 2 tablespoons of water. Add to the pan and cook while stirring until the sauce thickens, about 2 minutes. Remove from heat and let cool.

Step 7

After the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a ball.

Step 8

Flatten each ball into a disc and place 2 tablespoons of pork filling in the center.

Step 9

Gather the edges of the dough over the filling and pinch to seal, ensuring the pork mixture is fully enclosed.

Step 10

Place the filled buns seam-side down onto parchment paper squares.

Step 11

Set up a steamer and bring water to a boil. Place the buns into a steamer basket, leaving space between each bun, and steam for 15 minutes or until the buns are fluffy and cooked through.

Step 12

Remove from heat and allow to cool slightly before serving.
