Ingredients

  • 4 cups Cooked jasmine rice
  • 1 cup Carrots, diced
  • 1 cup Peas, frozen
  • 4 stalks Green onions, sliced
  • 2 large Eggs
  • 3 tablespoons Tamari (gluten-free soy sauce)
  • 2 tablespoons Sesame oil
  • 2 tablespoons Vegetable oil
  • 1 cup Cooked chicken breast, diced (optional)
  • 2 cloves Garlic, minced
  • 0.5 teaspoon Salt
  • 0.25 teaspoon White pepper

Directions

Step 1

Break up the cooked jasmine rice with a fork to remove any clumps and ensure it is cooled before using.

Step 2

In a large wok or skillet, heat the vegetable oil over medium-high heat.

Step 3

Add the minced garlic and diced carrots to the pan. Stir-fry for about 3 minutes until the carrots start to soften.

Step 4

Add in the peas and continue to stir-fry for another 2 minutes.

Step 5

Push the vegetables to the side of the pan and crack the eggs into the center. Scramble the eggs until fully cooked, then mix them with the vegetables.

Step 6

If using chicken, add it to the pan and stir-fry for 1-2 minutes to heat through.

Step 7

Add the cooked rice to the pan and stir well to combine with the vegetables, chicken, and eggs.

Step 8

Pour the tamari and sesame oil over the rice mixture. Sprinkle the salt and white pepper, then stir-fry everything together for about 4-5 minutes, allowing the rice to absorb the flavors and heat thoroughly.

Step 9

Finally, add the sliced green onions and continue to stir-fry for an additional minute.

Step 10

Remove from heat and serve hot as a main dish or alongside your favorite gluten-free Chinese dishes.
