Ingredients

  • 2 pounds Pork shoulder or pork belly
  • 0.5 cup Gluten-free tamari
  • 0.25 cup Hoison sauce
  • 3 tablespoons Honey
  • 3 tablespoons Brown sugar
  • 3 tablespoons Oyster sauce
  • 2 tablespoons Shaoxing wine or dry sherry
  • 1 tablespoon Sesame oil
  • 1 teaspoon Chinese five-spice powder
  • 3 cloves Garlic, minced
  • 1 teaspoon Red food coloring (optional)

Directions

Step 1

Trim the pork shoulder or pork belly of any excess fat, and then slice the meat into strips about 2 to 3 inches wide.

Step 2

In a medium bowl, whisk together the gluten-free tamari, hoisin sauce, honey, brown sugar, oyster sauce, Shaoxing wine, sesame oil, Chinese five-spice powder, minced garlic, and red food coloring if using.

Step 3

Place the pork strips in a large resealable plastic bag or a shallow dish and pour the marinade over the pork, ensuring all the pieces are well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 4 hours, preferably overnight.

Step 4

Preheat your oven to 375°F (190°C). Line a baking sheet with aluminum foil and place a wire rack on top. Lightly grease the wire rack to prevent sticking.

Step 5

Remove the pork from the marinade, allowing any excess to drip off, and arrange the strips on the prepared rack. Reserve the remaining marinade.

Step 6

Roast the pork in the preheated oven for 25 minutes.

Step 7

While the pork is roasting, transfer the reserved marinade to a small saucepan. Bring it to a boil over medium heat, then reduce the heat to low and let it simmer for about 10 minutes until slightly thickened. Set aside.

Step 8

After 25 minutes, remove the pork from the oven and brush it generously with the reduced marinade.

Step 9

Return the pork to the oven and continue to roast for an additional 25 to 30 minutes, basting once more halfway through, until the pork is cooked through and nicely caramelized.

Step 10

Remove the pork from the oven and let it rest for 5 minutes before slicing.

Step 11

Slice the Cha Siu thinly and serve with rice, noodles, or vegetables. Enjoy your flavorful gluten-free Chinese BBQ pork!
