Ingredients

  • 1 medium head Cauliflower
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Gluten-free all-purpose flour
  • 1.5 cups Whole milk
  • 0.5 teaspoons Garlic powder
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1.5 cups Gruyère cheese, grated
  • 0.5 cups Parmesan cheese, grated
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Break the cauliflower into small florets and rinse well under cold water. In a large pot, bring water to a boil and lightly salt it. Add the cauliflower florets to the boiling water and blanch for 5 minutes until just tender. Drain and set aside.

Step 3

In a medium saucepan, melt the butter over medium heat. Add the gluten-free flour to the melted butter, whisking constantly for about 1 minute to create a roux.

Slowly pour the milk into the saucepan with the roux, whisking constantly until the mixture is smooth and begins to thicken, about 3 to 4 minutes.
