Ingredients

  • 4 pieces Chicken breast
  • 1 head Cauliflower
  • 3 tablespoons Olive oil
  • 3 cloves Garlic cloves
  • 1 medium Onion
  • 2 tablespoons Gluten-free soy sauce
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Fresh parsley
  • 2 tablespoons Lemon juice

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Cut the chicken breasts into bite-sized pieces. Set aside.

Step 3

Cut the cauliflower into florets and rinse thoroughly. Set aside.

Step 4

Heat 2 tablespoons of olive oil in a large ovenproof skillet over medium-high heat.

Step 5

Add the chicken pieces to the skillet and season with salt, pepper, and paprika. Cook for about 5-7 minutes until they are browned and cooked through. Remove from the skillet and set aside.

Step 6

In the same skillet, add the remaining 1 tablespoon of olive oil. Add minced garlic and chopped onion. Sauté for 2-3 minutes until the onion becomes translucent and fragrant.

Step 7

Add the cauliflower florets to the skillet. Stir well to coat with the garlic and onion mixture.

Step 8

Pour the gluten-free soy sauce over the cauliflower and stir.

Step 9

Add the cooked chicken back into the skillet with the cauliflower.

Transfer the skillet to the preheated oven and roast for about 15 minutes until the cauliflower is tender and starts to brown.
