Ingredients

  • 1 large head Cauliflower
  • 3 tablespoons Unsalted butter
  • 3 tablespoons Gluten-free all-purpose flour
  • 2 cups Whole milk
  • 2 cups Sharp Cheddar cheese, grated
  • 1 cup Parmesan cheese, grated
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Bring a large pot of water to a boil. Trim the leaves and core from the cauliflower head and cut it into medium-sized florets.

Step 3

Once the water is boiling, add the cauliflower florets and cook for 5-7 minutes until they are tender but still firm. Drain and set aside.

Step 4

In a medium saucepan, melt the unsalted butter over medium heat. Add the gluten-free flour and whisk continuously for about 2 minutes to form a roux.

Step 5

Gradually whisk in the milk, ensuring there are no lumps, and continue to cook over medium heat until the mixture thickens, approximately 5 minutes.

Step 6

Reduce the heat to low and stir in the Cheddar cheese and Parmesan cheese, continuing to stir until the cheese has melted and you have a smooth sauce.

Step 7

Add the Dijon mustard, salt, black pepper, and paprika to the cheese sauce. Stir to combine, then remove the sauce from the heat.

Step 8

Place the cooked cauliflower florets into a baking dish. Pour the cheese sauce evenly over the cauliflower, ensuring all pieces are well-coated.

Step 9

Bake in the preheated oven for 20 minutes or until the top is golden and bubbly.

Step 10

Garnish with chopped fresh parsley before serving. Enjoy your gluten-free cauliflower cheese!
