Ingredients

  • 1.5 pounds Chicken thighs, boneless and skinless
  • 4 Garlic cloves, minced
  • 1 tablespoon Ginger, grated
  • 3 tablespoons Gluten-free soy sauce
  • 2 tablespoons Gochugaru (Korean red pepper flakes)
  • 2 tablespoons Gochujang (gluten-free Korean chili paste)
  • 2 tablespoons Honey
  • 1 tablespoon Sesame oil
  • 1 tablespoon Rice vinegar
  • 1.5 cups Mozzarella cheese, shredded
  • 2 Green onions, chopped
  • 1 tablespoon Sesame seeds
  • 2 tablespoons Vegetable oil

Directions

Step 1

Cut the chicken thighs into bite-sized pieces, about 1-inch cubes.

Step 2

In a large mixing bowl, combine minced garlic, grated ginger, gluten-free soy sauce, gochugaru, gochujang, honey, sesame oil, and rice vinegar. Mix well to form a marinade.

Step 3

Add the chicken pieces to the marinade, mixing thoroughly to ensure all pieces are coated. Let them marinate for at least 15 minutes while you prepare the other ingredients.

Step 4

Heat 2 tablespoons of vegetable oil in a large, non-stick skillet or pan over medium-high heat.

Step 5

Once the oil is hot, add the marinated chicken, making sure to add any remaining marinade from the bowl.

Step 6

Cook the chicken, stirring occasionally, for about 10-12 minutes until the chicken is fully cooked and the sauce has thickened.

Step 7

Reduce the heat to low and sprinkle shredded mozzarella cheese evenly over the chicken.

Step 8

Cover the pan with a lid to allow the cheese to melt completely, about 3-5 minutes.

Step 9

Once the cheese is melted and bubbly, remove the lid and sprinkle chopped green onions and sesame seeds over the top.

Step 10

Serve hot immediately, with steamed rice on the side if desired.
