Ingredients

  • 1 loaf gluten-free baguette or bread
  • 250 grams cherry tomatoes
  • 150 grams fresh mozzarella cheese
  • 20 grams fresh basil leaves
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice the gluten-free baguette or bread into 1/2-inch thick slices. You should have about 12 slices.

Step 3

Peel the garlic cloves and cut each in half. Rub the cut side of the garlic on each side of the baguette slices to infuse flavor.

Step 4

Place the baguette slices on a baking sheet and lightly brush each slice with 1 tablespoon of olive oil.

Step 5

Toast the bread slices in the preheated oven for about 5 minutes, or until they are golden brown and crisp. Remove from oven and set aside to cool.
