Ingredients

  • 500 grams broccoli florets
  • 1 can (approximately 284 ml) gluten-free cream of mushroom soup
  • 250 grams sharp cheddar cheese, shredded
  • 1 cup gluten-free breadcrumbs
  • 2 tablespoons unsalted butter
  • 2 large eggs
  • 1 cup milk
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish with a small amount of butter or cooking spray.

Step 2

In a large pot, bring water to a boil and add the broccoli florets. Blanch for 3-4 minutes until they are bright green and slightly tender. Drain the broccoli and run it under cold water to stop the cooking process, then set aside.

In a medium saucepan over medium heat, melt the butter. Once melted, slowly whisk in the gluten-free cream of mushroom soup to make sure there are no lumps.
