Ingredients

  • 4 pieces gluten-free tortillas
  • 6 pieces large eggs
  • 0.25 cup milk
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 medium red bell pepper
  • 0.5 medium onion
  • 2 cups spinach
  • 1 cup shredded cheddar cheese
  • 0.5 cup salsa

Directions

Step 1

In a medium-sized mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.

Step 2

Heat olive oil in a large skillet over medium heat. Add the diced red bell pepper and chopped onion. Sauté for about 5 minutes, or until the vegetables are tender.

Step 3

Add the spinach to the skillet and cook for another 1-2 minutes until wilted.

Step 4

Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are scrambled and just set.

Step 5

Warm the gluten-free tortillas in a clean pan over low heat or wrap them in a moist towel and heat in a microwave for about 20 seconds.

Step 6

Place each warm tortilla on a clean surface. Divide the egg and veggie mixture evenly among the tortillas.

Step 7

Sprinkle each with shredded cheddar cheese and spoon a generous amount of salsa over the top.

Step 8

Roll up each tortilla tightly into a burrito shape by folding the sides over the filling, then rolling from the bottom up.

Step 9

Serve immediately or wrap individually in foil for meal prep.
