Ingredients

  • 4 pieces Boneless chicken breasts
  • 2 cups Buttermilk
  • 2 cups Gluten-free all-purpose flour
  • 1 cup Cornstarch
  • 1 teaspoon Baking powder
  • 1 tablespoon Garlic powder
  • 1 tablespoon Onion powder
  • 1 teaspoon Paprika
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 0.5 teaspoon Cayenne pepper
  • 2 large Eggs
  • 4 cups Vegetable oil

Directions

Step 1

Start by cutting each boneless chicken breast into two or three smaller pieces so they fry evenly.

Step 2

Place the chicken pieces in a large bowl and pour the buttermilk over them, ensuring each piece is well-coated. Let marinate for at least 30 minutes or up to 2 hours in the refrigerator for more flavor.

Step 3

In another large bowl, mix together the gluten-free all-purpose flour, cornstarch, baking powder, garlic powder, onion powder, paprika, 1 teaspoon of salt, black pepper, and cayenne pepper.

Step 4

In a shallow dish, beat the eggs and season with the remaining teaspoon of salt and a dash of black pepper.

Step 5

Heat the vegetable oil in a large heavy-bottomed pot or deep fryer to a temperature of 350°F (175°C).

Step 6

Remove the chicken from the buttermilk, allowing any excess to drip off. Dip each piece into the flour mixture, then into the beaten eggs, and back into the flour mixture. Ensure each piece is thoroughly coated.

Step 7

Working in batches, carefully place the coated chicken pieces in the hot oil, avoiding overcrowding the pot. Fry for 6-8 minutes, turning occasionally, until the chicken is golden brown and cooked through with a crispy coating.

Step 8

Transfer the fried chicken to a paper towel-lined plate or wire rack to drain any excess oil.

Step 9

Serve hot, with your favorite sides or dipping sauce.
