Ingredients

  • 200 grams Rice vermicelli noodles
  • 300 grams Beef sirloin or tenderloin, thinly sliced
  • 3 tablespoons Fish sauce
  • 3 tablespoons Lime juice
  • 1 tablespoon Brown sugar
  • 2 cloves Garlic, minced
  • 2 tablespoons Gluten-free soy sauce
  • 0.5 teaspoon Chili flakes
  • 2 tablespoons Vegetable oil
  • 200 grams Lettuce, thinly sliced
  • 1 whole Cucumber, julienned
  • 1 whole Carrot, julienned
  • 100 grams Bean sprouts
  • 0.5 cup Mint leaves
  • 0.5 cup Cilantro
  • 0.25 cup Crushed peanuts
  • 2 stalks Green onions, sliced

Directions

Step 1

Start by preparing the marinade. In a medium bowl, mix 1 tablespoon of fish sauce, 1 tablespoon of lime juice, 1 tablespoon of brown sugar, 1 minced garlic clove, and gluten-free soy sauce. Add the sliced beef to the marinade, stir well to coat, and let it marinate while you prepare the other ingredients.

Step 2

Prepare the rice vermicelli noodles according to the package instructions. Usually, this involves soaking them in hot water for about 5-7 minutes until soft. Drain and rinse under cold water to stop the cooking process. Set aside.

Step 3

To make the dressing, combine the remaining fish sauce, lime juice, garlic, chili flakes, and a tablespoon of water in a small bowl. Stir until the sugar dissolves completely.

Step 4

Heat the vegetable oil in a large pan over medium-high heat. Add the marinated beef, and stir-fry for about 3-4 minutes until fully cooked and slightly caramelized. Remove from the heat and set aside.

Step 5

In a large bowl, combine the cooked rice noodles, lettuce, cucumber, carrot, bean sprouts, mint leaves, and cilantro. Toss gently to mix.

Step 6

Divide the salad mixture into serving bowls. Top each bowl with a portion of cooked beef, and sprinkle with crushed peanuts and sliced green onions.

Step 7

Just before serving, drizzle the dressing over the Bo Bun and give it a gentle toss. Enjoy your gluten-free Bo Bun immediately.
