Ingredients

  • 2 cups Gluten-free rolled oats
  • 1 cup Almond flour
  • 0.5 cup Coconut sugar
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter, melted
  • 1 teaspoon Vanilla extract
  • 0.25 cup Honey
  • 1.5 cups Fresh blueberries
  • 1 tablespoon Cornstarch
  • 1 tablespoon Lemon juice

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper.

Step 2

In a large bowl, combine the gluten-free rolled oats, almond flour, coconut sugar, cinnamon, and salt. Mix well.

Step 3

Add the melted butter, vanilla extract, and honey to the dry ingredients and stir until the mixture is evenly combined. The mixture should resemble coarse crumbs.

Step 4

Press about two-thirds of the oat mixture firmly into the bottom of the prepared baking dish to form an even layer.
