Ingredients

  • 2 pounds Beef chuck roast
  • 4 Guajillo chilies
  • 2 Ancho chilies
  • 1 medium White onion
  • 4 Garlic cloves
  • 1 cup Canned diced tomatoes
  • 0.25 cup Apple cider vinegar
  • 1 Cinnamon stick
  • 2 Bay leaves
  • 2 teaspoons Ground cumin
  • 1 teaspoon Dried oregano
  • 1 teaspoon Black pepper
  • 1.5 teaspoons Kosher salt
  • 4 cups Beef broth
  • 4 large Gluten-free tortillas
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Fresh cilantro
  • 2 Lime wedges
  • 1 Sliced avocado
  • 2 tablespoons Vegetable oil

Directions

Step 1

Start by toasting the guajillo and ancho chilies in a dry skillet over medium heat until they become fragrant, about 2-3 minutes. Remove the stems and seeds, then place them in a bowl and cover them with hot water to soak for about 15 minutes.

While the chilies are soaking, cut the beef chuck roast into large chunks and season them with salt and black pepper.

Peel and chop the white onion and garlic cloves.
