Ingredients

  • 500 grams Beef sirloin
  • 300 grams Firm tofu (beancurd)
  • 200 grams Shiitake mushrooms
  • 3 pieces Spring onions
  • 3 pieces Garlic cloves
  • 1 inch piece Ginger
  • 3 tablespoons Tamari (gluten-free soy sauce)
  • 1 tablespoon Cornstarch
  • 2 tablespoons Sesame oil
  • 3 tablespoons Vegetable oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 0.5 cup Water

Directions

Step 1

Slice the beef sirloin thinly against the grain. Pat it dry with paper towels to remove excess moisture.

Step 2

In a bowl, mix beef slices with cornstarch, 1 tablespoon of tamari, half of the sesame oil, salt, and black pepper. Marinate for at least 10 minutes.

Step 3

Slice the firm tofu into 1-inch cubes. Set aside.

Step 4

Clean and slice the shiitake mushrooms into thin slices.

Step 5

Finely chop the spring onions, reserving some greens for garnish.

Step 6

Peel and mince the garlic cloves. Peel and grate the ginger.

Step 7

Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the marinated beef and stir-fry until browned and cooked through, about 5 minutes. Transfer the cooked beef to a plate.

Step 8

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and grated ginger, and sauté until fragrant, approximately 30 seconds.

Step 9

Add the sliced shiitake mushrooms to the skillet. Stir-fry until the mushrooms are tender, about 5 minutes.

Step 10

Gently add the tofu cubes to the skillet, taking care not to break them. Stir in the remaining 2 tablespoons of tamari, the rest of the sesame oil, and water.

Step 11

Return the beef to the skillet. Combine all ingredients and simmer for about 3-5 minutes, allowing the flavors to meld.

Step 12

Finish by adding the chopped spring onions and stirring gently to mix.

Step 13

Remove from heat and transfer to a serving dish, garnishing with reserved spring onion greens.

Step 14

Serve hot with gluten-free rice or noodles of your choice.
