  • 2 pounds Beef chuck roast
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 large Onion
  • 4 cloves Garlic cloves
  • 3 medium Carrots
  • 3 stalks Celery stalks
  • 4 cups Gluten-free beef broth
  • 3 medium Potatoes
  • 2 leaves Bay leaves
  • 1 teaspoon Thyme
  • 0.5 teaspoon Rosemary
  • 1 cup Frozen peas

Directions

Step 1

1. Season the beef chuck roast with salt and black pepper on all sides.

Step 2

2. Heat olive oil in a large pot over medium-high heat.

3. Brown the beef on all sides, about 4-5 minutes per side. Remove beef from the pot and set aside.

4. Dice the onion, mince the garlic, slice the carrots, and chop the celery.
