Ingredients

  • 1 pound beef sirloin
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 gluten-free flatbreads
  • 0.5 cup cucumber, grated
  • 1 cup plain Greek yogurt
  • 1 tablespoon dill, chopped
  • 1 teaspoon white vinegar
  • 1 large tomato, sliced
  • 4 lettuce leaves
  • 0.5 red onion, thinly sliced

Directions

Step 1

Cut the beef sirloin into thin strips and set aside.

Step 2

In a bowl, combine olive oil, minced garlic, lemon juice, dried oregano, ground cumin, ground coriander, salt, and black pepper. Mix to create a marinade.

Step 3

Add the beef strips to the marinade and toss until fully coated. Allow to marinate for at least 15 minutes.

Step 4

While the beef is marinating, prepare the tzatziki sauce. In a separate bowl, combine grated cucumber, Greek yogurt, chopped dill, and white vinegar. Mix well and season to taste with salt and pepper. Set aside.

Step 5

Heat a large skillet over medium-high heat. Once hot, add the marinated beef strips and cook for about 5-7 minutes, stirring occasionally, until the beef is browned and cooked to your liking.

Step 6

Warm the gluten-free flatbreads in a separate skillet or in the oven as per package instructions.

Step 7

Place a warmed flatbread on a plate, layer with lettuce leaves, cooked beef strips, tomato slices, red onion, and a generous dollop of tzatziki sauce.

Step 8

Repeat the assembly for the remaining flatbreads and serve immediately.
