Ingredients

  • 500 grams Ground beef
  • 1 medium Onion, finely grated
  • 2 cloves Garlic, minced
  • 50 grams Gluten-free breadcrumbs
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Ground coriander
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Dried oregano
  • 0.25 teaspoon Cayenne pepper
  • 4 units Gluten-free pita or flatbread wraps
  • 120 grams Plain yogurt
  • 60 grams Mayonnaise
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Garlic powder
  • 1 cup Lettuce, shredded
  • 1 large Tomato, diced
  • 1 small Cucumber, sliced
  • 0.5 medium Red onion, thinly sliced

Directions

Step 1

In a mixing bowl, combine ground beef with grated onion, minced garlic, gluten-free breadcrumbs, salt, black pepper, coriander, cumin, smoked paprika, dried oregano, and cayenne pepper. Mix well until all ingredients are fully incorporated.

Step 2

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Step 3

Form the beef mixture into a loaf shape, approximately 2 inches thick, and place it on the prepared baking sheet.

Step 4

Bake in the preheated oven for about 50-60 minutes, or until the internal temperature reaches 160°F (71°C) and the meat is evenly browned.

Step 5

While the beef is baking, prepare the garlic sauce. In a small bowl, whisk together plain yogurt, mayonnaise, lemon juice, and garlic powder until smooth. Refrigerate until ready to use.

Step 6

Once the beef is cooked, let it rest for 10 minutes before slicing it thinly into strips.

Step 7

To assemble the donair, place slices of the beef on a gluten-free pita or flatbread wrap. Top with shredded lettuce, diced tomato, sliced cucumber, and sliced red onion.

Step 8

Drizzle a generous amount of garlic sauce over the top.

Step 9

Fold the wrap around the filling and serve immediately. Enjoy your gluten-free beef donair!
