  • 1.5 cups Gluten-free oat flour
  • 0.5 cup Almond flour
  • 0.25 cup Coconut sugar
  • 0.25 teaspoon Salt
  • 0.5 cup Butter (or coconut oil for dairy-free option)
  • 1 Egg
  • 4 Bananas, ripe
  • 1 tablespoon Lemon juice
  • 1 teaspoon Vanilla extract
  • 0.5 cup Coconut milk (or heavy cream)
  • 2 tablespoons Honey or maple syrup
  • 2 tablespoons Cornstarch

Directions

Step 1

Preheat the oven to 350°F (175°C).

Step 2

In a medium bowl, combine the gluten-free oat flour, almond flour, coconut sugar, and salt.

Cut the butter into small pieces and add it to the flour mixture. Mix with your hands or a pastry cutter until the mixture resembles coarse crumbs.

Add the egg to the mixture and blend until the dough starts to come together. Form it into a disk and refrigerate for about 10 minutes.
