Ingredients

  • 500 grams Ground beef
  • 50 grams Tapioca starch
  • 3 cloves Garlic, minced
  • 1.5 teaspoons Salt
  • 0.5 teaspoons White pepper
  • 100 milliliters Ice water
  • 1 liter Beef broth
  • 4 whole Shallots, thinly sliced
  • 2 tablespoons Cooking oil
  • 2 tablespoons Spring onions, chopped
  • 2 tablespoons Fried garlic
  • 100 grams Cabbage, shredded
  • 150 grams Rice noodles (gluten-free)

Directions

Step 1

In a large mixing bowl, combine ground beef, tapioca starch, minced garlic, salt, and white pepper. Gradually add the ice water while mixing the ingredients until well combined and the mixture becomes sticky.

Step 2

Shape the meat mixture into small balls, about the size of a golf ball.

Step 3

In a large pot, bring the beef broth to a boil. Once boiling, reduce to a simmer and gently drop the meatballs into the broth.

Step 4

Cook the meatballs for about 10-15 minutes or until they are fully cooked and float to the surface.

Step 5

While the meatballs are cooking, heat cooking oil in a small frying pan over medium heat. Add sliced shallots and fry until golden brown and crispy. Remove and drain on a paper towel.

Step 6

Prepare the rice noodles according to the package instructions. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.

Step 7

To serve, divide the rice noodles into bowls. Add shredded cabbage, spring onions, and a few meatballs to each bowl.

Step 8

Ladle the hot broth over the noodles and meatballs, ensuring each bowl has a generous amount of soup.

Step 9

Garnish with fried shallots and fried garlic for added flavor and crunch.

Step 10

Serve hot and enjoy your gluten-free Bakso Sapi!
