Ingredients

  • 2 cups Sushi rice
  • 2.5 cups Water
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 1 cup Imitation crab meat (or cooked shrimp)
  • 0.5 cup Gluten-free Kewpie mayo
  • 2 tablespoons Sriracha
  • 1 Avocado, diced
  • 1 Cucumber, diced
  • 2 tablespoons Gluten-free soy sauce
  • 2 Nori sheets, crumbled
  • 2 tablespoons Spring onions, chopped
  • 1 tablespoon Sesame seeds, toasted

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

Step 3

In a medium saucepan, combine the rinsed rice and 2.5 cups of water. Bring to a boil over medium-high heat.

Step 4

Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes until all the water is absorbed.

Remove the pot from the heat and let it sit, covered, for another 10 minutes.

In a small bowl, mix together rice vinegar, sugar, and salt. Microwaving it slightly can help dissolve sugar and salt.
